A quick round-up of Sunday recipes for your paleo diet today!

Starter - Lemony Asparagus Soup

A good soup is always a great way to get started with a great meal. There are a host of great paleo-friendly soup recipes over at PaleoFood.com, but this one - Lemony Asparagus Soup, which can be served hot or cold - particularly appealed to me because I just got some lovely fresh asparagus in my organic veg box delivery today:

This silky, citrus-spiked soup, which can be served warm or chilled, is adapted from a dish from Acquerello, an elegant San Francisco restaurant.

Ingredients:

3 pounds asparagus, twelve 3″ tips reserved, the rest cut into 1/2″ pieces

2 tablespoons extra-virgin olive oil

1 small white onion, halved and thinly sliced

4 cups chicken stock

1-inch wide strips of lemon zest

1 teaspoon finely grated lemon zest for garnish

2 teaspoons fresh lemon juice

Salt and freshly ground white pepper
Bring a large saucepan of water to a boil. Fill a large bowl with ice water. Boil all of the asparagus until bright green and barely tender, about 3 minutes. Drain and transfer to the ice water to cool, then drain again. Cut the 12 asparagus tips in half lengthwise and set aside.

Wipe out the saucepan. Add the olive oil and heat until shimmering. Add the sliced onion to the saucepan and cook over moderately high heat, stirring, until softened, about 5 minutes. Add the chicken stock and lemon zest strips, bring to a boil and simmer for 5 minutes.

Add the asparagus pieces and cook until tender, about 5 minutes. Discard the lemon zest strips.

Working in batches, puree the soup in a blender. Return the soup to the saucepan and stir in the lemon juice. Season with salt and white pepper and reheat if necessary. Ladle the soup into bowls and garnish with the asparagus tips and grated lemon zest.

I was very impressed when I noticed this recipe over at the Perfect Health Diet blog. Pairing beef with beets - genius! You just know those earthy flavours are going to go well together, and of course, both of these foods are full of minerals. You can find the whole recipe on the blog here. Those kind Perfect Health Diet folks also provide you with some music to listen to whilst preparing your meal!

Dessert - Blackberry Cobbler

I love recipes that can be easily adapted to suit the mood of the day. This recipe is particularly clever. It can be used to make a sweet and comforting dessert, or - with the addition of zucchini and some savoury flavourings (see link) - a main-dish meal. Nice!

Blackberry Cobbler

1 bin of fresh blackberries - about 3 cups
Honey
1 1/2 cup Almond Meal (ground up almonds)
1 egg
2 tbsp melted Coconut Oil
Cinnamon
Preheat the oven to 350 degrees.
Wash and Pat dry the blackberries. Add into a pie dish. Drizzle with honey.
In another bowl mix together the Almond Meal, egg and coconut oil.
Do not over mix…
Crumble the topping onto the blackberries. Sprinkle with cinnamon.
Bake at 350 degrees for 35 minutes.
